- 1 cup yellow lentils (toor daal)

- 1/2 cup split chickpeas (chana daal)

- 1/4 cup split black gram (urad daal)

- 1/4 cup split red lentils (masoor daal)

- 1 onion, finely chopped

- 2 tomatoes, diced

- 3 cloves of garlic, minced

- 1-inch ginger, grated

- 1 green chili, finely chopped

- 1 teaspoon cumin seeds

- 1 teaspoon mustard seeds

- 1/2 teaspoon turmeric powder

- 1/2 teaspoon red chili powder

- 1 teaspoon coriander powder

- Salt to taste

- Fresh cilantro for garnish

- 2 tablespoons ghee or oil

Serving Size: 4-6 servings

Cooking Time: Approximately 40 minutes

Instructions:

1. Rinse and Soak:

Start by rinsing all the lentils thoroughly. Then, soak them in water for at least 30 minutes. This helps in reducing the cooking time and ensures a creamier consistency.

2. Pressure Cook:

In a pressure cooker, combine the soaked lentils with enough water. Add turmeric powder and salt. Pressure cook until the lentils are soft and well-cooked.

3. Tempering:

In a separate pan, heat ghee or oil. Add cumin seeds and mustard seeds. Once they splutter, add chopped onions, minced garlic, grated ginger, and green chili. Sauté until the onions turn golden brown.

4. Tomatoes and Spices:

Add diced tomatoes to the tempering mixture. Cook until the tomatoes are soft and oil starts to separate. Now, add red chili powder and coriander powder. Stir well to blend the spices.

5. Combine and Simmer:

Transfer the cooked lentils to the tempering mixture. Stir everything together, adjusting the consistency with water if needed. Let it simmer on low heat for a few minutes to allow the flavors to meld.

6. Garnish and Serve:

Finish off with a generous garnish of fresh cilantro. Serve the mix daal hot with steamed rice or your favorite Indian bread.

Conclusion:

Mix daal, with its medley of lentils and aromatic spices, is a culinary masterpiece that embodies the essence of Indian comfort food. By following these simple steps, you can create a dish that not only tantalizes the taste buds but also warms the heart. Experiment with the proportions and spices to suit your palate, and soon you'll be savoring the perfect bowl of mix daal in the comfort of your own kitchen.
